zoodles + pesto
I love pesto. I love it, even more, when it's made purely from plants. The pesto recipe is not only versatile - add it easily to soups, pizza, nourish bowls - it will only take you five minutes to whip up. I mixed it in with some zoodles (zuchinni noodles) that I made from two smaller zuchinnis with my spiralizer.
- 2 cups fresh basil
- 3 tbs pine nuts
- 5 (or really however much or little you want) garlic cloves
- juice of 1 lemon
- 3 tbs nutritional yeast (adds that cheesy flavor!)
- 1/4 tsp pink salt
- 2 tbs extra virgin olive oil
- 3 oz filtered water
Add all ingredients into your food processor and pulse until desired consistency. You can add more water if need be.
I paired my noodles with some simple, yet delicious, lentils and rice for added bulk because you guys know, I'm always hungry.
