lemon bliss balls (+ jam?!)

Good afternoon beautiful humans!

After posting about these lemon bliss balls, I knew I had to share these with you guys. And since then, I can't tell you how many have inquired about the recipe! Before we jump into it, I will note that I did adapt the original recipe from Tropeaka here.  But that is the beauty when it comes to recipes like these - you don't always have to follow the instructions to T. 

Not only do these bliss balls taste like lemon cake batter, they are full of healthy fats + protein. These are perfect for on-the-go people like myself and they serve well as a pre- and post workout snack.  Versatality = amazing. Also, these are dairy free, gluten free and 100% vegan!  

INGREDIENTS

  • 1/2 cup unsweetened shredded coconut
  • 1/2 + 1/3 cup almond meal
  • 1 cup cashews
  • 1/4 cup coconut nectar (this is a GAME CHANGER)
  • Zest of 1 lemon
  • juice from the lemon you zested
  • 1/4 cup cashew butter
  • 2 tsp Tropeaka Camu powder (huge source of vitamin C)
  • 2 tbsp Tropeaka Vanilla Pump Protein powder (plant based protein that doesn't taste chalky)
  • 1 tsp Tropeaka Maca powder (balances hormones)
  • 2 ounces filtered water (optional/read below)

METHOD

Place all ingredients (except water) into your food processor and mix until consistency is crumbly. Then, slowly add in 1 - 2 ounces of filtered water until consistency is more like cake batter. Once you've reached the desired consistency, scoop out little handfuls and roll batter with palms into little balls. Rolling the bliss balls into more shredded coconut will not only be aesthetically pleasing, it will also help remove the gooey dough from your hands.  

Allow them to "set" in the fridge for at least 10 - 15 minutes.  These Bliss Balls are wonderful on their own, however, I've found they to pair deliciously with berry jam or preserves.
