lemon + blueberry muffins


Sunday’s are meant for baking. At least that’s how I’m feeling currently, after spending all day in the kitchen. 😏 Check out these lemon + blueberry muffins! 🍋 They are 💯 #plantbased made from @bobsredmill whole grain oat flour. Whole grain, as opposed to refined grain, contains all of its fiber, vitamins, mineral acids & antioxidants, unlike refined grains, which has been stripped of most nutritional value. 


• 2 bananas mashed
• 1/3 cup of coconut oil, melted if you live in a cooler climate
• juice + zest from 1 lemon
• 1 cup almond milk
• 1/2 cup of sugar
• 2 cups @bobsredmill oat flour
• 2 tsp baking powder
• 1 tsp salt
• 1 cup fresh blueberries

In two separate mixing bowls, divide wet ingredients from dry and once they’ve been thoroughly whisked, start to slowly add dry ingredients to wet, whisking along the way. Line muffin try with baking cups or grease well with coconut oil. Bake for roughly 20 mins or until the tops are golden brown at 425F. Tag a friend you’d love to bake muffins with!
